Ingredients
- 3¼ cups all-purpose flour
- 1 cup white sugar
- ¼ cup brown sugar
- 3 tsp baking powder
- ½ tsp salt
- ½ cup apple juice
- ¾ cup vegetable oil, or any neutral oil such as canola oil, grapeseed oil, sunflower oil, and corn oil
- 1 cup buttermilk
- 1 tsp ground cinnamon
- 3 cups apples, peeled, cored and grated
- 2 pcs eggs
- 1 tsp vanilla syrup
Instructions
- Heat oven to 400 degrees F.
- Grease bottoms only of 12 muffin cups or line with muffin liners.
- In a medium bowl, combine flour, sugar, baking powder, cinnamon, and salt; mix well.
- In a large bowl, combine apple juice, oil, buttermilk, vanilla syrup, and egg; blend well.
- Add dry ingredients all at once; stir just until dry ingredients are moistened. *
- Stir in chopped apples.
- Fill the cups roughly ⅔ to ¾ full.
- Bake for 22 minutes or until a toothpick inserted in the center comes out clean.
- Cool 1 minute before removing from pan.
- Serve warm.
