Oven-Baked Frito Pie

Thanks to Liz at Sweet Simplicity Designs, my site got a little makeover!  It was long overdue and I love how it turned out.  Thank you Liz!

I've also moved to a new domain, sweettreatsmore.com.  You should be redirected to the new site if you type in the old blogspot address, but you may need to re-subscribe through feedburner or by email.

Take a look around and explore the new site! I hope you like it as much as I do.

Now, how about some Frito Pie?

What I love about this Oven-Baked Frito Pie is the layer of Frito's on the bottom of the chili as well as on the top.  I pretty much love Frito's...they are the most addicting little chips ever....so get a big bag! The chips on top get nice and toasted and the cheese throughout it gets nice and melted as well.

The chili comes together in a cinch, and although it seems there are a lot of steps, it all really comes together pretty quickly.

First just brown your meat {ground beef or turkey burger}.

Then toss in a can of chili beans, diced tomatoes, tomato sauce, a packet of taco seasoning, and 1/4 cup cheese.  Stir it all together and let it simmer for a minute or two.

While the chili simmers, place a layer of Frito chips along the bottom of a casserole dish.

Then spread that chili over those chips and place it in the oven to bake for about 20 minutes.

When the 20 minutes is up, slather some sour cream over the top....

And top with a few more Frito's, a sprinkle of cheese, and bake for another 5 minutes.

The cheese will be all melted and the chips nice and toasted.  Now you can dig in and devour.

This is great Game-Day food as well as a great post Trick or Treating meal... that is if the kids have any room for real food.

source:  What's For Dinner?

1 lb. lean ground beef
1 can (16 oz) chili beans
1 can (8 oz) tomato sauce
1 can (15 oz) diced tomatoes
1 envelope low sodium taco seasoning
1 cup shredded cheddar cheese (2% fat kind)
3 1/2 cups corn chips (Frito's)
1 1/4 cup fat free sour cream

Directions:
Cook ground beef until meat is browned; drain. Stir in beans, tomato sauce, taco seasoning mix and 1/4 c. of cheese. Sprinkle 1 cup corn chips in bottom of 8x8 baking dish or 9x13 dish. Cover with chili. Bake at 350 for 20 minutes. Spread sour cream over chili. Top with remaining corn chips and cheese. Bake 4-5 minutes longer.

Makes 6 to 8 servings

**I froze half of the chili so essentially halved everything else (half the chips, half the cheese, half the sour cream.  You get it) and put it together in a small round casserole dish (smaller than an 8x8).

  1. Loving the new look, what an exciting time!

And this recipe looks fantastic, have you ever tried Walking Tacos? You use the same ingredients you have here but you buy the little packets of Frito chips and put all of the fixings INTO the bag. They're super kid friendly and taste SO good!

  10. I'm in Texas and we're finally having some fall weather today so I went to the grocery store and bought all of the stuff to make this. We just finished eating and my whole family is moaning and groaning with full bellies, after ooohing and aaaahing with each bite!! This was delicious! So much better than Frito chili pie with can chili and far less sickening. Two thumbs up!! (Btw, I used more cheese than what you called for just because, well, it didn't seem like it would be cheesy enough for me and my family :-)

  15. I made this but used a can of chili that I had extra from a nasty butt hot dog recipe I tried last night. I added more cheese and fritos because I like my frito pie extra chip-y, lol. I also topped with some finely diced onion after the last bake. I will never make frito pie another way. I love the way it's layered...I love that it is baked. Next time I will make the chili for it, too... Sooo good!

  20. My family is not too fond of beans in the chili...Have you tried the Rotel Chili Fixins'? I usually run it through my mini food processor first...kids don't like the chunky tomatoes :/ My picky #2 daughter recently ate Frito chili pie @ a lock-in and has been asking for it...Anyway...think I will get the stuff for this tonight. It's a little cool here :)

  22. This recipe is great. I left out the beans because my daughter doesn't like them and used diced tomatoes with diced chilies. I also added sliced Jalepenos and more fritos at the end. We loved it.
