Zucchini Pizza Casserole Recipe

This recipe should have been called Zucchini Lasagna casserole because it tastes more like lasagna than pizza I think. I can’t remember where I found this recipe.


The recipe brings your favorite zucchini pasta recipe into an irresistible pizza casserole dish. You will be surprised at how good this recipe is especially the combination of your favorite cheeses.

Ingredients

  • 4 cups zucchini, shredded and unpeeled
  • ½ tsp salt
  • 2 eggs
  • ½ cup parmesan cheese, grated
  • 4 oz cheddar cheese, shredded and divided
  • 8 oz mozzarella cheese, shredded and divided
  • 1 lb ground beef
  • ½ cup onion, chopped
  • 1 oz tomato sauce
  • ¼ tsp dried oregano
  • ¼ tsp dried basil

Instructions

  1. Place zucchini in a strainer; sprinkle with salt. Let it drain for 15 minutes.

  2. Squeeze out excess moisture.

  3. Combine zucchini with eggs, parmesan cheese, and half of the cheddar and mozzarella cheeses.

  4. Press into a greased baking dish.

  5. Bake at 400 degrees F for 20 minutes.

  6. Brown ground beef with onion.

  7. Add tomato sauce.

  8. Pour over baked zucchini.

  9. Top with the rest of the cheeses.

  10. Bake for 20 minutes more.
