Brett and I love asparagus; its a popular side to our meals. Usually we just enjoy it steamed or blanched with a little butter, salt and pepper (pretty boring right). Well that's about to change. I'm looking for some new, yummy ways to prepare it! In my search, this Roasted Asparagus with Balsamic Browned Butter recipe caught my eye. We were in charge of a side dish for our Easter dinner and decided to gave it a whirl. I loved it (h0pefully everyone else did too)!Roasted Asparagus with Balsamic Browned Butter

40 asparagus spears, trimmed (about 2 pounds)
Cooking spray (I used EVOO)
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
2 tablespoons butter
2 teaspoons low-sodium soy sauce
1 teaspoon balsamic vinegar
Preheat oven to 400°.
Arrange asparagus in a single layer on baking sheet; coat with cooking spray (or EVOO). Sprinkle with salt and pepper. Bake at 400° for 12 minutes or until tender.
Melt the butter in a small skillet over medium heat; cook for 3 minutes or until lightly browned, shaking pan occasionally. Remove from heat; stir in soy sauce and vinegar. Drizzle over the asparagus, tossing well to coat. Serve immediately

ReplyDeleteYou have been cooking a ton! This looks great. It's a little different from how I cook mine but similar so I want to try it. We eat asparagus a lot around here.
ReplyDeleteI still shudder when I think of some asparagus I cooked Brett when he was living with us a long time ago. It was terrible. I boiled it and it was beyond soggy.
